Taught me to masticate with purpose


My chef-mentor was appalled by the pace the cooks in his kitchen were forced to inhale food. "How can you possibly taste what you are eating? Animals!"
So, once a week, Chef cooked for us during our pre-meal meeting and we tried his (accent on His!) food. He would ask us to taste for certain seasonings or the technique itself. Eating, he explained, was as much a labor of love as was the actual cooking.
To this day, at the start of each school year, the very first day in class, I cook for my students using Chef McKinney's guiding principle that in order to cook well, one must eat well - and know how to eat.
