Happy as a housewife, after all.



Backstory

Tonight: Tilapia wrapped in tinfoil with celery, mushrooms and a sauce made of butter, parmesan, fresh crushed basil, lemon juice, salt, pepper and mayo - garnished with scallions and baked for 20 minutes. On the side, steamed collard greens, honey ginger-glazed carrots and brown rice. All while babysitting two of my sister's kids. I'm feeling like SuperMom today.

Love Tilapia as well and will try this recipe. I usually always cook fish wrapped in foil and baked. I also put chopped tomatoes over it. Yummy!
