Grilled Salmon - I made it for the first time the other night and it turned out great.

• 2 large salmon fillets
• Worcester sauce
• Honey
• Olive oil
• Salt
• Pepper

Heat enough olive oil to cover entire bottom of a skillet over medium flame. Mix together approx. 1/4 cup worcester sauce, 3 tbs honey, 2 tbs olive oil and salt and pepper to taste. I made up the sauce as I went along, so I'm not positive of the ratio - basically whatever looks right to you.

If fillet has scales, cover non-scale side in sauce first, either with a spoon or a brush (I couldn't find a brush in my parents' kitchen, but a spoon worked fine). Place fillet in skillet scale-side-up and cook for 3-4 minutes for 1/2 inch fillet or 5-6 minutes for 1" fillet. While the first side is cooking, cover the scale side in the remaining sauce. After appropriate time, flip and grill the second side for the same amount of time.

It was delicious.

For side dishes, I cubed potatoes, tossed in olive oil, salt and pepper and put them in the oven 225 for about an hour, stirring once or twice, then cranked the heat up to 400 for fifteen minutes. I also boiled green beans in water with a little bit of sesame oil and salt and added dried sliced coconut and roasted almonds. We had sourdough bread as well. A great tip for bread, if you want it to be nice and soft on the inside but golden, flaky and crunchy on the outside, very quickly run the entire loaf under water and then pop it in the oven at about 250 for ten minutes.

By the way, my mom walked in the door with most of these ingredients while I was holding a crying baby and asked me to make dinner - she was going out and wanted dinner ready when she got back in an hour and fifteen minutes and I was able to pull it off. It was very, very easy.

Chocolate pudding
2 ripe avocados
2-3 Tbsp. whole milk
1/4cup cocoa powder
1 tsp. vanilla
1 tsp. peanut butter (or more if you like) I've made it without, too
1/4 cup honey, maple syrup or agave syrup
Whirl together with a hand blender until smooth.
It's great by itself - also good with banana slices, fresh berries, or crushed nuts.
