My school's mascot was a tiger and we had this huge tiger head on the front of the building. Some of the guys in my class stole the cow statue from the local BBQ restaurant and put it in the mouth of the tiger. It was pretty funny.
The seniors at my school a couple of years ago borrowed three piglets from one student's parents' farm; they greased the piglets and painted the numbers 1, 2, and 4 on them, then released them into the halls. The morning was crazy trying to catch them, but even once that was over the school officials were pulling their hair out trying to find piglet #3, which of course didn't exist. We've had some awesome pranks at our school, but I'd say that one takes the cake for sheer ingenuity.
