lutefisk. this is a norwegian dish and the name translates literally to "lye fish". (and yes, it really is fish soaked in lye.) my best guess is that it was a means of preservation in the days before refrigeration. i'm half norwegian, but i'm grateful that my mom never made this while we were growing up because i'm not a fan of fish, even minus caustic chemicals! (my apologies to any lutefisk fans who read this - smile)

Either way part of the poor mans{woman's) pig diet back in the old days. In some parts it's now a delicacy...go figure.
