Prefer your pasta undercooked, or overcooked?

I like it cooked not too soft but I don't like it too hard either. I've been cooking it for so many years I just know when its right.

The philosopher in me thinks that my idea of undercooked and overcooked is probably different to yours. That's the most honest answer I can give.

SAG is so right. I like it how I like it and my kids have known no other way while at home. I prefer al dente -- firm to the tooth. The kids do say though that stepmom's pasta is "too mushy".
